Great Mixes From Lehi Mill

My father’s made-from-scratch pancakes were an important part of our camping tradition. The heavenly aroma coming from his skillet was enough to was enough to draw us from our sleeping bags, even on frosty mornings in the high country.

Dad must have relied on a recipe at some point in his career, but he never would divulge it. He’d simply mix in some of this and a little of that, not even measuring, making it impossible to recreate.

Over the years I’ve leaned to make pretty good pancakes but they never quite measure up to Dad’s. My best are made from whole wheat. I’ve found that the quality of the flour is important—I do best with flour I’ve ground myself using hard, white wheat. Four that has sat for months in a warehouse or on a store shelf lacks the rich flavor and fluffy texture I get from grain that is freshly milled.

Lately I’ve become converted to the mixes sold by Lehi Mill. The big, old mill complex located just west of I-15 in Lehi includes a small retail store where they sell all kinds of grain products, including mixes that are ideal for camp cooking. Their pancakes are superb—as good as mine but not quite as good as Dad’s. It’s obvious they use fresh ingredients. And preparation is so easy, just add water, stir and cook.

Pancakes, pancakes and more pancakes

It’s fun to sample the variety of products available from Lehi Mills. Their blueberry buttermilk pancakes are my favorite but I also really like their original recipe, a buckwheat style they call “Lehi Pride.”

Their muffin and cobbler mixes also make excellent camp fare. Just mix them up and throw into the Dutch oven.
